On September 24, 2025, Sabrina Mace from IFREMER (French Institute for Ocean Science) presented FOODGUARD project results at the Microbes 2025 – SFM Congress in Bordeaux, France.
Her oral presentation, titled “Evaluation of a microbiome engineering approach using lactic acid bacteria as bioprotective cultures to extend the shelf life of Gilthead Seabream (Sparus aurata) fillets”, showcased innovative findings on seabream biopreservation derived from the FOODGUARD project.
The study explored the use of lactic acid bacteria as bioprotective cultures to enhance product safety and extend the shelf life of seafood, contributing to more sustainable and microbiome-based preservation strategies in the food industry.
The Microbes 2025 Congress, organized by the Société Française de Microbiologie (SFM), brought together researchers and professionals from across Europe to discuss advances in microbiology and its applications in food, health, and environmental sciences.
